It's been a while since I've brought you a new Good Eats recipe (or any other post), hasn't it? Well, here you go - Cajun Chicken Pasta courtesy of the amazing Cara Carroll of Pearls, Handcuffs and Happy Hour. It's a Chili's knock-off that will knock your socks off! You've got to try it!
Recipe for: Cajun Chicken Pasta
From: Pearls, Handcuffs, and Happy Hour
Ingredients:
2 boneless, skinless chicken breasts (I actually used 3)
4 teaspoons Cajun seasoning
4 tablespoons butter
3 cups heavy whipping cream
1/2 teaspoon lemon pepper seasoning
1 teaspoon salt
1 teaspoon black pepper
1/4 teaspoon garlic powder
1 package penne pasta
Roma tomatoes, chopped
Shredded Parmesan cheese
Green onions (optional)
Directions:
1. Cook pasta according to package directions. Slightly moisten chicken with water and place in a large Ziploc bag. Add Cajun seasoning, seal bag, and shake it up until the chicken is well-coated.
2. In a large skillet, saute the chicken in 2 tablespoons of butter, turning when necessary. (I still haven't mastered the art of cooking chicken on the stove top - I always seem to burn it, causing the whole house to fill with smoke and stink. So...the next time that I make this meal, Jim is going to cook the chicken on the grill.)
3. While chicken is cooking, grab another pot and combine cream with 2 tablespoons of butter and remaining seasonings (salt, pepper, garlic powder, and lemon pepper). Heat the mixture until it starts to bubble. Turn off the heat and pour over cooked pasta. Toss to coat evenly.
4. When the chicken is cooked, remove from heat and transfer to cutting board. Slice chicken into strips.
5. Spoon pasta onto plate and top with several strips of chicken. Top with tomatoes, green onions, and sprinkle with Parmesan. Serve with a garlic bread stick to sop up the pasta sauce! Yum!
