Good Eats: Pumpkin Nutella Swirl Bread or Muffins

Pinterest truly is the gift of a website that just keeps on giving.  For dinner tonight, I'm cooking Ranch House Crock Pot Pork Chops with Parmesan Mashed Potatoes, a recipe found via Pinterest.  For breakfasts, desserts, and snacks throughout the week, Jim and I will be enjoying these Pumpkin Nutella Swirl Mini-Loaves of Bread, made with yet another recipe found via Pinterest.  If you haven't jumped on the Pinterest bandwagon yet, you absolutely must - and soon!  These loaves just might convince you.  Who can resist Nutella and pumpkin?!?

Recipe for:  Pumpkin Nutella Swirl Bread or Muffins
From:  http://www.realmomkitchen.com/ (via http://www.pinterest.com/)

Ingredients:
1 3/4 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 tablespoon cinnamon
1 1/2 teaspoons nutmeg
1 1/2 cups sugar
1/2 cup canola oil
1/3 cup water
1 cup canned pumpkin (not pumpkin pie filling)
2 eggs
1 teaspoon vanilla extract
8 tablespoons Nutella (I used 1 tablespoon each for 8 mini-loaves)

Directions:
1.  Preheat the oven to 350 degrees.  Spray mini-loaf pan/muffin pan with cooking spray.  Set aside.
2.  In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.  Set aside.
3.  In a large bowl, whisk together sugar, oil, water, pumpkin, eggs, and extract.  Whisk until smooth and combined.
4.  Slowly stir in the flour mixture.  Mix until ingredients are combined.
5.  Pour the batter in the mini-loaf pan, making sure batter is evenly divided.  Drop a heaping tablespoon of Nutella onto each loaf.  Swirl the Nutella into the pumpkin batter with a knife.  Place the loaf pan in the oven.  Bake for about 30 minutes or until a toothpick comes out clean when inserted.
6.  Cool the loaf pan for 15 minutes on a wire rack.  Carefully remove the loaves.  Cool completely before slicing.
*You can make regular size loaves, too.  This recipe should make 2 8x4 loaves.  Adjust baking time to about 60 minutes.  You can also make muffins.  Bake muffins between 15 to 20 minutes.
