Good Eats: Baked BBQ Chicken Taquitos

A few weeks ago, I knocked Jim's socks off with these delicious taquitos.  He could not stop lavishing me with praise for just how good they were.  Last week, I needed a meal that I could whip up quickly, and thought of this one.  After swinging by the grocery store to pick up the ingredients, I made another delightful batch of these taquitos.  Unfortunately, Jim became sick with the stomach flu the following day.  As much as he likes these taquitos, he now associates them with the violent flu that came over him the next day (He actually stayed home from work!).  Jim has sworn them off for now, but I would bet that he will return to them someday...when the association fades.  They're that good!  And no, the taquitos did NOT make him sick...I ate them for dinner, lunch, and dinner again, and was perfectly fine!

Recipe for:  Baked BBQ Chicken Taquitos

Ingredients:
1 tablespoon olive oil
1 red onion, chopped
3-4 boneless skinless chicken breasts, cooked and shredded
1 (20 ounce) bottle BBQ sauce
2 Tablespoons cilantro, finely chopped
1 1/2 cup mozzarella cheese, shredded
10 flour tortillas
Nonstick cooking spray

Directions:
1.  Preheat oven to 400 degrees. In a large pan, warm olive oil over medium heat. Saute onion in oil until soft. Add shredded chicken and BBQ sauce to pan and combine. Remove from heat and stir in cilantro and mozzarella cheese.
2.  Spread chicken mixture evenly between 10 tortillas. Roll up and place seam side down on a greased cookie sheet. Spray the tops of taquitos with nonstick cooking spray. Cook for 15 minutes, or until golden brown.
