Good Eats: Classic Stuffed Peppers

For some time now, I have wanted to make stuffed peppers. I finally got around to finding a recipe on http://www.allrecipes.com/ last week, and made the peppers on Thursday. Jim and I were pleased with our peppers! They weren't difficult to make, and they were quite tasty! I doubled the recipe so that we would have leftovers, but we liked the peppers so much that we each ate 1 1/2 peppers on Thursday night (I let Jim have the one leftover pepper for lunch yesterday)! We will definitely be making these again!

Recipe for: Classic Stuffed Peppers
From: http://www.allrecipes.com/

Ingredients:
2 medium green bell peppers
1 egg, lightly beaten
1 cup meatless spaghetti sauce, divided
1/4 cup uncooked instant rice
1 tablespoon finely chopped onion
1/4 teaspoon salt
1/2 teaspoon Worcestershire sauce
Dash pepper
1/2 lb. uncooked lean ground beef

Directions:
1. Cut tops off peppers and discard; remove seeds. In a large saucepan, cook peppers in boiling water for 5 minutes. Drain and rinse in cold water.
2. In a bowl, combine the egg, 1/4 cup of the spaghetti sauce, rice, onion, salt, Worcestershire sauce, and pepper. Crumble beef over the mixture and mix well. Stuff into peppers. Place in an ungreased 1 1/2 quart baking dish. Pour the remaining sauce over peppers. Cover and bake at 350 degrees for 50 to 55 minutes or until a meat thermometer reads 160 degrees.
