I continue to put to good use the cookbooks that my sister gave me for Christmas. We've tried several new recipes in the last few weeks, and have not yet found one that we did not like!
Today's Good Eats recipe is for a hearty, cheesy Beefy Mac that I made a couple weeks ago. It was easy to put together, and went down easy, too! Enjoy!
Recipe for: Beefy Mac
From: Sandra Lee Semi-Homemade Slow Cooker Recipes
Ingredients:
12 ounces dried elbox macaroni
1 1/2 pounds lean ground beef
1 packet (1.5 ounce) beef stew seasoning mix, Lowry's
2 cups shredded four-cheese blend
1 can (10.75 ounce) condensed cheddar cheese soup
1 cup frozen chopped onion, Ore-Ida
1/2 cup reduced sodium beef broth
Chopped fresh parsley
Chopped fresh tomato
Directions:
1. In a pot of salted, boiling water, cook macaroni for 5 to 6 minutes or until almost al dente. Drain and transfer to a 5-quart slow cooker.
2. In a large skillet, cook and stir ground beef and beef stew seasoning mix until beef is browned, breaking up clumps. Drain off fat. Stir beef, cheese, soup, onion, and beef broth into pasta in slow cooker.
3. Cover and cook on LOW heat setting for 2 to 4 hours.
4. Serve with chopped tomato and parsley.
