Good Eats: Door County Cherry Muffins

Here is the second muffin recipe from the White Lace Inn in Sturgeon Bay. I also enjoy these muffins, though they don't satisfy my sweet tooth as much as the banana chocolate muffins do.

I had once baked a batch of these cherry muffins and sent Jim to work with one for him, and one for Matt, who was carpooling with Jim that day. Jim revealed to me that evening that he had eaten both muffins before Matt had gotten into the car! Piggy, piggy.

Recipe for: Door County Cherry Muffins
From: White Lace Inn, Sturgeon Bay, WI

Ingredients:
4 cups flour
2 cups sugar
2 tablespoons baking powder
1 teaspoon cinnamon
3 cups frozen and rinsed Door County cherries
1 cup butter (melted)
1 cup milk
4 eggs
1 teaspoon vanilla

Topping:
1 cup flour
1/3 cup soft butter
1/2 cup sugar
1/2 teaspoon cinnamon

Directions:
1. Preheat oven to 425 degrees. Combine dry ingredients and blend.
2. In a separate bowl, toss 1 tablesppon of dry ingredients with cherries.
3. In a large bowl, mix butter, milk, eggs, and vanilla. Then add dry ingredients and stir until well moistened. Stir in cherries.
4. Spoon batter into muffin tins to about 3/4 full and sprinkle with topping mixture. Bake at 425 degrees for 15 to 20 minutes. Makes 2 dozen muffins.
